begin with enough steaks (Fresh, not frozen) to feed your party.
Buying shark is a little tricky, you want one with very little red and no slime look to it. remember if it looks shiny, it is old..
Place 4-6 oz shark steak on piece of heavy aluminum foil (12x12inch) squeeze a half a lemon on it, add a dash of salt and pepper, a sprig of cilantro (2-3 leafs worth and the stem) cover one side with Zatarains Blackened Seasoning, wrap in the foil with the upper side of foil making a tent with the ends folded up to prevent escape of juices. Grill on a very hot grill for 4-5 minutes, about 5 inches above the fire.. Carefully move the package to the side of the grill away from fire for 4 more minutes, and remove. Be carefull when opening the foil as steam escaping will be super hot..
Garnish with lemon slices and enjoy.. :thumbup1:
