My wifes "No bake" cookies

    Brothers, This is one of my wifes signature recipies. She makes these and they always turn out great! If she wants something special done she always whips up a batch and she gets what she wants. Enjoy!

    2 Cups Sugar
    ¼ cup Cocoa Powder
    ½ cup milk
    1 stick butter
    1 tsp vanilla
    pinch of salt
    ½ cup peanut butter
    3 cups Quick Cooking Oatmeal

    In a large sauce pan, mix the sugar and cocoa powder. Stir in milk. Cut up butter and add to the mixture over medium heat until it comes to a boil. Keep stirring so it won’t burn. Let boil gently 1-2 minutes. Take off heat and add salt and vanilla. Stir till blended and then slowly add peanut butter until it is incorporated. Slowly add in the oatmeal until well combined. Use a spoon and place small cookie sized drops on wax paper and allow to cool. Enjoy with as cold glass of milk!
