"Cowboy" Baked Beans

Serves a heart 4

Ingredients

2 cans of white beans (any type of beans could work)

1 tbsp of unsalted butter

1 Spanish onions

4 cloves of garlic

1 lb of salt pork (bacon would work)

2 chipotle peppers

2 cups brown sugar

1 jar or can of crushed tomatoes

Salt to taste

Pepper to taste

1 tsp dried cumin

1/2 tsp dried coriander ( you can toast both the cumin and coriander in a dry frying pan to add more flavor depth)

Method

Pre heat your oven to 375 degrees. Grab a pot that can be used on the range top or that xan be put in the oven. Dice and Render out the fat of the pork until it becomes crispy. Once crispy, reserve onto a paper towel lines bowl. In the same pot, drain away all but a small layer of fat. Turn the heat up to high, and add the butter. Dice and cook the onions and garlic until caramelized. Add the brown sugar and cook for 5-8 min or when the sugar is quite dark. Add your ale to deglaze. Cook down until thick but not all evaporated. Add your tomatoes and diced chipotles. Place in oven for 25 min or until thick.
