Smoked chicken salad

Smoked chicken breast. I used hickory wood to get a good strong smoke on the breast.
Red onion, celery, and instead of pickle relish (not a pickle fan) I use crushed pineapple (in pineapple juice NOT the heavy syrup), red seedless grapes and Miracle whip.
Once you chop and combine all the ingredients that strong hickory flavor will calm down a bit. The blend of the hickory smoke and the sweet from the pineapple and grapes is heavenly. You won't be able to stop eating. Guaranteed.

• Sounds great. Here's one of my fav's:

Chipotle Chicken Salad

- 4 cups of white and dark chicken meat, grilled or roasted and shredded, skin and bones removed ( skin and bones make a great chicken stock!)
- 1 green onion cut on a bias
- 2 cloves of finely minced garlic
- 1 can of smoked chipotle peppers in Adobo sauce, puréed.

* only 3 tbsp of this will be needed. 4 if you like it spicy. These peppers usually come in small cans, and it will keep in the fridge, wrapped for a 1-2 weeks.*

- 3 cups of Hellmans mayo or Miracle Whip
- 5 springs of fresh thyme finely chopped, or 1/2 of a tsp of dry time (I prefer fresh)
- salt and pepper

Method.
- combine garlic, mayo, 3 tbsp of chipotle pepper purée, thyme, and salt and pepper.

- add mayo to chicken and mix with green onion and salt and pepper.

- great in wraps, sandwiches and salads.

- keeps up to a week wrapped in the fridge.
