Blakes Chicken Tortilla Soup

Quick and Easy!

Ingredients:
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can black beans
2 (14.5 ounce) chicken broth
1 (10 ounce) chunk chicken
1 (10 ounce) can diced tomatoes with green chile peppers, drained
1 (1.25 ounce) Packet of taco seasoning
1/4 Teaspoon black pepper
1 Teaspoon salt

Optional: Mexican Style Cheese
4 Avocados
Crushed Tortilla Chips

Directions:
Pour it all into a saucepan or crock pot. Simmer till medium heat. Add avocado slice, tortilla chips, cheese and serve.

Ready in about 30 minutes.

Serves 6-8

If I may, make sure to add the avocado after soup is in the bowl and ready to eat. The cheese they used in the state of Sonora MX was quaso fresco. You can buy in most grocery stores here in the US. It's a crumble type cheese sold in block form. And add bacon, they did it at one of my favorite restaurants and it blew my mind! I lived in Sonora for 5 yrs, studied the food and cooking techniques. Good times! Thanks for the recipe!
