Ingredients:
4-6 large eggs
1/4 cup salsa
4-6 corn tortillas
1/4 cup water
shredded cheese, monterey jack or cheddar
oil for frying
Use a skillet with a lid.
Heat oil in skillet. Fry tortillas until limp and small brown flecks appear. Place tortillas on an oven-proof plate or baking dish. Spoon salsa on tortillas, thinly, to the edges. Gently crack eggs in skillet. Add water, and cover the skillet. Cook eggs until whites are set.
Gently remove eggs with spatula, and place on tortillas. Sprinkle cheese on eggs, and place under broiler for a couple of minutes until cheese melts. Serve immediately.
