After that, the new WM reads his list of appointed officers and they are installed.

PA is always different!

Secretary is installed by former Secretary or WM if he is repeating, then same for Treasurer, JW takes over the lodge and installs new JW, SW takes over the lodge and installs new SW, WM takes the lodge back and installs new WM. Everyone who does not posses "The Word of the Chair" is dismissed from the lodge and something happens. Whoever is left in the lodge (New WM and PMs, DDGM) close the lodge while everyone else is eating! The newly installed officers do not actually take up their offices until St. John's Day.

The appointed officers are not installed, they serve at the Will and Pleasure of the WM and he can remove or move them about as he sees fit. They simple show up in their chairs at the 1st stated meeting in January.

They certainly are but nothing wrong with that.

I'm being installed as JW in my home lodge tonight and JW in my plural lodge tomorrow night. Chairs so far have been JD home lodge 16', SD plural 16', SD home lodge 17', SS plural 17' also webmaster and district communication officer.

Officially sat in the south for the full meeting for the first time on January 24th. I had memorized my lines and did a good job. I received compliments from the Worshipful Master, some of the PMs and brothers.

Two weeks later four of us (consisting of our WM, SW, myself, and my son who is our Senior Steward) went on a lodge visit . They needed help to confer an FC degree. I sat as JW, my son as SS, and our SW as SW. It was the first degree ritual for all of us. We did a great job it was a little nerve racking, but I was glad I had been studying my rituals. I can't say how special it was for me personally.

We do our first EA degree on February 28th in our lodge and I'm sure that will be very special as well.

His Jewel of Office is the Plumb,... which is a stonemason's instrument used for ascertaining the alignment of a vertical surface. It symbolizes upright behavior among Masons.

The Junior Warden of a Masonic Lodge is the third in command of the Lodge. The Junior Warden sits in the South (symbolic of the position of the sun at midday) and is responsible for the Brethren while the Lodge is at ease or refreshment. His position is similar to a Second Vice-President. The Junior Warden, too, may open the lodge if the Master or Senior is unable to attend the meeting.

It is the Junior Warden's duty to arrange meals for the lodge, and, typically, the 2 Stewards act as his assistants in this responsibility. Symbolically, it is also his duty to make certain that the members do not convert their refreshment into intemperance or excess. This is a holdover from earlier days, which still remains as part of the Junior Warden's job description, even though in most U.S. jurisdictions, alcohol is barred from the lodge.
Which Officers Can Open the Lodge? The Master, the Senior Warden, the Junior Warden or a Past Master.
A lodge is either at labor or refreshment it’s never at ease.

In your jurisdiction. In two of my three jurisdictions. There is definitely a time when the lodge is at ease and in California that word is explicitly used.

At ease, in the one of my jurisdictions that use that word, is for the second section. Think about it - The events depict FCs yet they are in a room that has been Opened on the 3rd degree. Even though they are MMs in real life they depict FCs as actors. The lodge shouldn't simply be "At work" during a second section for this reason. That would be an error in the ritual. Of course every version of the ritual that I have learned or experienced by visitation has had at least one error of some sort. By error I don't mean the Brothers performing it incorrectly. By error I mean that version of the ritual, as taught by GL instructors, contains actions that are not correct when thought through.

At refreshment is for a "Stated meeting dinner" where the lodge is opened, called to refreshment. Then the Brethren go downstairs for the dinner. Then the Brethren go upstairs for the business meeting and the wives stay downstairs for a ladies' program. There are entire states that never even say those words and certainly never go through that sequence of events. I haven't been to a "Stated meeting dinner" since I lived in Seattle. I've been to a TON of Stated meetings that included a dinner during the same evening but elsewhere always before the Opening or after the Closing not with the lodge Opened and "at refreshment". There's a difference.

At refreshment is also to call in non-Masons. For example I'm been to 50 year pin presentations while at refreshment. Or giving our scholarships or citizenship service awards. Yet I've also been to lodges that just don't Open if they intend to have an open part of their meeting.
